Gulai is a type of spiced stew found in South East Asia and Sayur means vegetables. Gulai is characterised by a rich, aromatic sauce made from coconut milk and a blend of ground spices.
Description
Gulai is an easy to make vegetable curry that is both flavorful and nutritious.
Ingredients
Gulai:
1 Stalk of Lemongrass
1 Bay Leaf
2 Kaffir Lime Leaves
1 Piece of Crushed Galangal (Ginger works as a substitute but use 3x the amount)
2 Bunches of Kale (can also substitute with collard greens or other leafy greens)
Salt
Sugar
White Pepper
14 Oz Can of Unsweetened Coconut Milk
Spice Paste:
4 Tbsp Water
4 Shallots
2 Cloves of Garlic
3 Red Chilies
2 Candlenuts
1/4 Tsp Coriander
1/4 Tsp Black Pepper
1/4 Tsp Turmeric
Directions
Steps:
Bring water to a boil and then add 1 tsp of salt.
Once boiling, cut kale or greens. Boil until half cooked.
Remove and drain the greens.
Saute the ground spices to make their fragrance "bloom".
Add the coconut milk and stir until it comes to a boil.
Add the greens, salt, sugar, and white peppers.
Simmer for 10 minutes, adjusting seasonings as needed. Cook until desired texture for greens (e.g. crunchy or soft) is reached.
