Warak Enab, or stuffed grape leaves, is a dish made by wrapping grape leaves around a filling of rice and meat or vegetables. Often served as an appetizer, it can vary in flavor and preparation across different cultures.
Ingredients
Warak Enab:
~20 Grape Leaves, Rinsed
1/4 Lb of Lamb or Beef
1 Cup of Rice
1/2 Tsp of Ground Cumin
1/2 Tsp of Ground Cardamon
1/2 Tsp of Ground Cinnamon
1/2 Tsp of Ground Allspice
1/2 Tsp of Ground Black Pepper
3 Tbsp of Lemon Juice
1 Lb of Lamb or Beef Chunks
2 Tomatoes, Sliced
Salt & Olive Oil to Taste
Directions
Warak Enab:
Prepare filling by mixing uncooked rice, meat, spices, olive oil, and salt to taste.
Place a leaf shiny side down on a flat surface
Add 1 Tsp of filling near the base.
Fold, like a burrito, the sides in and roll tightly.
Line the bottom of a pot with extra grape leaves, sliced tomatoes, and chunks of meat seasoned with salt and pepper.
Arrange the stuffed, rolled leaves snugly and in layers.
Pour lemon juice over the top and add water until warak are just covered.
Add a drizzle of olive oil on top.
Place a plate over the waraks to weigh them down.
Cover the pot of warak and let them simmer for 1 hour or until rice is tender.
