Lumpia, a Filipino spring roll, is a popular appetizer that can be enjoyed on its own or with a dipping sauce.

Description

Lumpia, a type of spring roll, is made of thin paper-like or crêpe-like pastry skin called "lumpia wrapper" enveloping savory or sweet fillings. They are commonly found in Indonesian and Filipino cuisine.

Steps:

  1. Wash carrots and cabbage with water, then thinly slice them.
  2. Boil for 4 minutes and drain.
  3. Thinly slice chicken and then marinate with oyster sauce, soy sauce, sugar, and sesame oil for at least 30 minutes.
  4. Stir-fry the chicken for ~2 minutes.
  5. Add carrots, cabbage, and scallions and stir-fry everything for ~1 minute.
  6. Taste and adjust seasoning as needed.
  7. Strain mixture of chicken and veggies so spring roll wrappers don't easily tear.
  8. Starting slightly away of a corner of the wrapper, place 1 tbsp of filling into the wrapper.
  9. Note: Careful not to overstuff or wrapper may tear or lumpia cook unevenly..

  10. Similar to a burrito, fold the corner to cover the filling once or twice.
  11. Fold the left and right corners tightly, towards the center.
  12. Dab with water the last corner before folding to ensure a proper seal.
  13. Repeat until all filling or wrapers are used.
  14. Fry in oil at over medium heat for 2-3 minutes or until golden brown. Drain on paper towels.
  15. Serve with sweet chili sauce or vinegar with chopped garlic and chili. Best enjoyed warm for a cripsy texture.
